Rosemary & Thyme & Acorn Squash...yes please



One of my favorite foods during the holidays are different varieties of squash. This recipe is super simple and extremely delicious. The seasonings used in this recipe can be applied to other varieties of squash. One acorn squash can feed 3-4 people (we had leftovers)

Cut the acorn squash in half and scoop out the seeds. Next slice the halves into wedge pieces.


Combine butter, sugar, pepper, and herbs in a bowl and melt. Mix and brush mixture all over squash wedges.


They're ready for the oven!


pre-heat the oven to 400 degrees F and bake for 20 minutes
after first 20 minutes baste the wedges in the liquid from the bottom and bake for another 20 minutes

The wedges are now caramelized with delicious herb goodness. 
Mangia! Mangia!

INGREDIENTS:
1 acorn squash
pinch of salt
1/2 stick of butter
1/4 cup of brown sugar
1 tblsp minced rosemary
1 tblsp minced thyme
1/8 tsp cayenne pepper (add more or less depending on how much of a kick you want)

  1. Just put this in the oven with olive oil substituted for the butter :) Can't wait!!
