Asian Pear Pie


For the last two years I've made a pear pie right around the holidays and both times they were a huge success. This year Boa and I made this pie together which is why it's that much more special. This year instead of bartlett pears I used Asian pears. The results are out of this world delicious!

INGREDIENTS:
2/3 cup flour divided
1/2 cup granulated sugar
1/3 cup brown sugar
1/2 tsp cinnamon
1/8 tsp nutmeg
1/8 tsp salt
3 tblsp fresh lemon juice
3 tblsp chilled butter (cut into small cubes/pieces)
4 medium Asian pears (firm so that when they're in the oven all the flavor and juice bake out)
1 trader joe's pie dough (frozen section)
coconut oil

Wash and peel pears. Slice pears into 1/4 inch slices. 
Preheat oven to 375 degrees.
Combine 1/3 cup of flour, 1/2 cup of granulated sugar, cinnamon, nutmeg, and salt in a large bowl. 
Add fresh squeezed lemon juice and pears to the flour mix. Mix pears in the flour mix until evenly coated. 
Brush coconut oil over 9 inch pie pyrex. 
Lay the pie dough gently over and into the pyrex and flute the edges. 
Spoon pear mixture into the pie crust.

Using a hand mixer/standing mixer combine the remaining 1/3 cup of flour, 1/3 cup of brown sugar, and 3 tblsp chilled butter in bowl. Mix until consistency is like coarse meal. Sprinkle over pears.  
Bake the pie at 375 degrees for an hour. Best served within half an hour!
